Chef Tommy Finch's Salsa Verde Recipe

Chef Tommy cooked an amazing meal to honor farmers at The Beaverkill Valley Inn in Livingston Manor New York. It was the first-ever benefit dinner to raise funds for For Farmers and its upcoming grant cycle for farmers. A centerpiece for the meal was the Snowdance Farms chicken, grilled with salsa verde.

Ingredients 2 cups chopped beet tops

1 cup chopped cilantro 1 cup chopped parsley 1 cup chopped chives 1/2 cup chopped arugula 1 Tablespoon raw minced garlic 2 tablespoon of minced shallots 1 chopped jalapeño 3 cups of extra virgin olive oil 1 cup Steen’s cane vinegar 1 tablespoon red pepper flakes S&P to taste Yield: 1.5 quarts Instructions Place all ingredients in food processor. Pulse until desired smoothness. Taste & enjoy.
